The “A Method for Protecting Colors of Kidney Beans”, which was completed by researchers from the South China Botanical Garden of the Chinese Academy of Sciences, was recently authorized by the national invention patent.
 
Kidney beans are aliased with long pods, long beans, and powdered beans. Due to natural conditions, the oversupply of cowpeas in the summer and autumn seasons caused a large amount of accumulation, slow sales and low prices. Therefore, the problem of storage and transportation has become a bottleneck restricting the production, transportation and sales of cowpea.
 
The invention discloses a method for preserving color preservation of cowpea, comprising: selecting a cowpea pod with no mechanical damage and pests and diseases after 10 to 15 days of harvesting on a sunny day; soaking the pod of the cowpea in the cowpea fresh liquid for 0.5 to 10 minutes The cowpea fresh-keeping liquid on the surface of the fruit is dried, and then stored in a fresh-keeping bag and stored. Wherein the cowpea fresh-keeping liquid is an apple polyphenol aqueous solution having a mass fraction of 0.05% to 5%. By treating the cowpea pod with this method, the commercial rate of cowpea can be increased by 15% to 69%.
