1. Raw Materials

2. Production Yield

From every 50 kg of wet gluten, you can produce approximately 47 kg of vegetarian sausage. This means a yield of about 94%, making it an efficient and cost-effective method for producing plant-based meat alternatives.

3. Manufacturing Method

(1) Shaping:

Begin with fresh wet gluten, as the fresher it is, the better the texture. Cut the gluten into thick strips, similar in thickness to a thumb. Use two bamboo chopsticks as a core, then wrap the gluten around them, creating a long, cylindrical shape about 10 cm in length. The key here is to ensure even distribution of the gluten around the chopsticks for a consistent shape.

(2) Cooking:

Once the gluten is wrapped around the chopsticks, place it into a pot of boiling water and cook until fully done. This usually takes about 10-15 minutes, depending on the thickness of the gluten. Make sure the gluten is completely cooked through to achieve the desired texture.

(3) Removing Chopsticks:

After cooking, remove the gluten from the pot and let it cool slightly. Once cooled, carefully take out the chopsticks, leaving behind a hollow, sausage-like structure. This is your vegetarian sausage, ready for further use or packaging.

4. Tools and Equipment

You will need a few basic tools for this process, including bamboo chopsticks, a cooking pot, a stove (preferably an earth stove for traditional methods), scissors for cutting the gluten, and some kind of rack or fence to hold the shaped sausages while they cool.

5. Specifications and Quality Standards

The finished product should be between 30 to 40 pieces per kilogram, with a uniform size and smooth surface. There should be no cracks (baotou), and the interior should not contain excess water. These quality standards ensure that the vegetarian sausage maintains its texture and appearance, making it ideal for both home and commercial use.
