How to process dehydrated carrots

Carrot tablets are a new type of vegetable processing products that has risen in the domestic market in recent years. Because of its rich nutrition, bright color, and fresh taste, it is welcomed by consumers. The production method is now described as follows:

3. Operation (1) Raw material cleaning. According to the quality requirements of raw materials for food processing, the acquisition is carried out, and the defective products with variegated color, deformity, thinness, and serious diseases and pests are removed. (2) Peeling. Alkali liquid peeling can be used. The alkali-treated raw material was immediately rinsed with flowing fresh water 2-3 times. When the lye is peeled, the concentration of the sodium hydroxide solution is 8%-12%, the temperature is 90° C., and the time for soaking alkali or lye is 1-3 minutes.
(3) Segmentation. Cut into small squares with a knife or vegetable cutter.
(4) Blanching. Boil with boiling water or steam for 2-3 minutes, which is hot, but not hot.
(5) color protection. Soak it in a 1.5% sodium sulfite solution for 5 minutes to prevent discoloration, then rinse with water once.
(6) Drying. Conditional drying can be done with a dryer, drying can also be used drying room, at 65 °C -75 °C
Bake for about 6 hours and serve as dried carrots. Dry product moisture content is 5%-8%.
(7) Softening and briquetting. Softening should generally be carried out before packaging, that is, the dried products are piled together. After 1-3 days, the water content can be uniform. After the product is dried, it can be molded by hot pressing. After the compaction, the volume is reduced to about 1/3 of the original volume.
(8) Packaging. The compacted carrot pellets have a moisture content of no more than 8% and can be packaged. Small packaging and more use of opaque composite film vacuum or nitrogen sealed packaging.
