Last week, I briefly mentioned the reissue of *The Cake Bible* in my roundup. Here's what I said:
*The Cake Bible*, 35th Anniversary Edition by Rose Levy Beranbaum and Woody Wolston hit shelves on the 22nd. For context, the original version came out in 1988 and featured 320 recipes across 592 pages. This new edition is an impressive tome with 684 pages and 386 recipes. The initial edition earned the IACP Cookbook of the Year (1988), a James Beard award in Baking & Desserts, as well as the prestigious Book of the Year (1988) and was later honored with the IACP Culinary Classic award in 2017.
This updated edition includes fresh photography and reflects the 35 years Rose has spent refining her recipes based on new techniques and reader feedback. As always, her books come with both weight and volume measurements (one of the first in the USA to adopt this practice), along with meticulously detailed instructions for each recipe. There are countless conversion charts for adjusting recipes to different sizes, tips for success, and variations for many of her tried-and-true recipes.
Rose hasn’t forgotten the book’s history; the new edition features the original foreword by Maida Heatter and a new one penned by Ron Ben-Israel. The chapters are divided into Cakes, Showcase Cakes, Wedding and Special Occasion Cakes, Frostings and Other Adornments for All Cakes, Special Effects and Decorative Techniques, and conclude with a section on Ingredients and Equipment. She wraps up the book with pages dedicated to high-altitude baking and a list of recipes by eggs used.
