Even though it’s officially October and I’m all about embracing the cozy vibes of fall—think hearty soups, warm bread, and pumpkin everything—it was this dish that popped into my mind when we decided to host a laid-back dinner tonight. Because let’s face it, it’s just that good.
I absolutely adore burgers, especially when they’re prepared just right. There’s something about sinking your teeth into a perfectly juicy patty that makes it one of my go-to meals! While fall is here, and Florida is finally catching up on the cooler weather, I’m looking forward to cooking up some classic seasonal dishes like chili, pasta, and soup. But for now, I’m savoring every bite of this incredible burger.
What I love most about this recipe is how the tomatoes are incorporated directly into the patty rather than sitting on top. I’m not a huge fan of eating tomatoes raw, but when they’re cooked down and integrated into the burger itself, it adds a depth of flavor I really appreciate. Plus, it keeps the burger extra juicy and flavorful.
Caribbean Bleu Burger
(Serves 4)
//Ingredients:
1 pound ground beef
1 (14.5 ounce) can Red Gold petite diced tomatoes with lime juice and cilantro, drained
1 egg, beaten
1/4 cup bread crumbs
Salt and black pepper to taste
1 pineapple, cored and sliced
1 avocado
Crumbled blue cheese for topping
4 ciabatta rolls
3 tablespoons olive oil
//Instructions
In a mixing bowl, combine the ground beef, drained tomatoes, beaten egg, and bread crumbs. Shape the mixture into four patties and season generously with sea salt and freshly ground black pepper. Grill the patties to your preferred doneness.
While the burgers are grilling, slice the ciabatta rolls in half and brush them lightly with olive oil. Place the rolls and sliced pineapple on the grill, flipping them occasionally to achieve a nice char on both sides.
Once the burgers are cooked, assemble them by placing a patty on a grilled roll, followed by a slice of grilled pineapple, thin slices of avocado, and a generous sprinkle of crumbled blue cheese. Serve warm and enjoy!
