Kandelia processing spicy oil eggplant
As a raw material of Hunan cuisine, spicy oil sauce is popular with consumers. The method of processing the spicy oil eggplant will now be described as follows.
Choice of materials. Select the candel of fresh and tender meat, prepare red pepper, ginger, soybean meal and salt as accessories.
Cleaning. Clean solanum fruit.
Cooking. Steam cooking, kill live cells and enzymes in eggplant meat, prevent oxidation browning, cook until the eggplant becomes soft and discolored but not completely rotten.
Drying. Cut the eggplant into 2 large flaps. Each large flap is divided into 3 to 4 small flaps, but do not cut them all. Place it in the sun for 12 hours.
Marinated. Sprinkle salt on the cross section of the eggplant at a rate of 2.5 kg of salt per 50 kg of broiled eggplant, and layer it in a pot for 10 to 12 hours. On the second day, it was taken out and exposed again, until the eggplant became darker in color and became a semi-finished product. Then put the dried eggplant petals into clear water and soak for 20 minutes. When they are inflated, remove and dry them.
Seasoning. When it reaches the semifinished product, it is cut into pieces. For every 50 kilograms of dried eggplant, add 1.5 kg of salt, 10 kg of red pepper, 20 kg of soybean meal, a little ginger, stir it well, put it in the altar, compact it and seal it. After 15 days of fermentation, it will be the finished product.
